The food additive E576, known as sodium gluconate, is the sodium salt of gluconic acid. It is obtained industrially by fermentation of glucose using microorganisms of the genus Aspergillus niger, followed by neutralization with sodium hydroxide and crystallization.
It is a white crystalline powder, odorless, with a slightly salty taste, highly soluble in water and slightly soluble in alcohol. Its main function is to act as a stabilizer, sequestrant of metals, and texture agent, preventing mineral precipitation and improving food consistency.
It was approved as a food additive in the European Union after evaluations by EFSA and JECFA (WHO). EFSA established an Acceptable Daily Intake (ADI) of "not specified," indicating that it is not considered a health risk at the levels used.

EFSA and JECFA conclude that it is safe for the general population, including children and adults. No relevant toxicity mechanisms have been identified, as gluconic acid is naturally metabolized in the body.
There is no evidence of allergies, carcinogenicity, or reproductive toxicity. Sensitive populations such as individuals with kidney failure should consider total sodium intake, but the contribution from the additive is minimal. No interactions with medications are known.
